  • 50ml of White Rum
  • 25ml of Chartreuse
  • 25ml of freshly squeezed lime juice
  • A dash of Sirop de gomme
  • Top with sparkling water
  • Preferred glass would be a Highball
  • A dash of

Add the rum, Chartreuse, lime juice and sirop de gomme into a cocktail shaker and shake vigorously. Strain with a Hawthorn strainer into an ice-filled highball glass, and top with sparkling water or soda water. Garnish with a slice of lime.

I learned this cocktail from one of my favourite cocktail books, "Ultimate Bar Book" by Mittie Hellmich, and this is one of her creations. I'm a big fan!

She relates that there is a "visually epic moment just as the sun goes down called the green flash, in which a green glow appears for 2 or 3 seconds along the horizon line". I have yet to visit there, but I know what cocktail I'll be drinking when I do.
